Cumin Roasted Pumpkin, Feta & Couscous Salad with Fresh Herbs, Currents & Preserved Lemon

This salad is a  really beautiful combination of fresh vegetables, Israeli cous cous and tangy feta and preserved lemon. Great with any dish but especially our lamb platter.
